Broccoli Rabe and Sausage

Broccoli rabe and sausage is a dish that combines savory Italian sausage with the slightly bitter, taste of broccoli rabe. This dish is quick and easy to make in a pinch. You can slice the sausage into quarter rounds to cook even faster.

Broccoli-Rabe-and-Sausage

Ingredients

1 large bunch broccoli rabe
6 sweet Italian sausages (you can leave whole or cut into chunks)
4 large cloves garlic chopped
½ cup extra virgin olive oil
1 chicken bouillon cube
1 lemon quartered
1 tsp salt
½ tsp black pepper
¼ tsp red pepper flakes

Directions

    1. Cover the bottom of a large skillet with olive oil and let heat.
    2. Add sausage pieces and cook fully.
    3. Wash and cut about 1 inch off the bottom part of the broccoli rabe discard. Dry well and chop up into small pieces .
    4. Remove the sausage from the skillet, add more olive oil and sauté the garlic till golden.
    5. Add the chopped broccoli rabe to the skillet and saute for about 10-15 minutes.
    6. Add the lemon juice, bouillon cube and drizzle more olive oil over the broccoli rabe.
    7. Return the sausage to the skillet and mix again. Add more olive oil. Mix well.
    8. Serve with warm bread.
