Angel Hair Pasta with Shrimp and Arugula
This is a very simple and very flavorful pasta dish. It can be whipped up in no time and tastes delicious . This is a great week night meal or special candlelight dinner. This is one of our favorites. Serves 4
Ingredients
1 lb angel hair pasta
16 large shrimp – cleaned and peeled
1 cup fresh arugula cleaned
½ pint cherry or grape tomatoes halved
4 tablespoons butter
1 chicken bouillon cube
½ cup extra virgin olive oil
½ cup white wine
1 shallot chopped
4 cloves garlic chopped
½ cup reggiano parmigiano
2 tbsp fresh parsley chopped
The juice of 1 lemon
1 tsp salt
½ tsp black pepper
½ tsp red pepper flakes
Directions
1. Add the pasta to salted boiling water.
2. Cook till desired tenderness
3. Drain and set aside.
4. Cover the bottom of the skillet with the olive oil and butter when hot add the shrimp and cook about 2-3 minutes on each side.
5. Remove the shrimp and set aside.
6. Do not discard the oil and butter in the skillet but add the garlic, shallot,salt, pepper and red pepper flakes and sauté till garlic is golden brown.
7. Add the wine, lemon juice and bouillon cube, let the cube dissolve, add the tomatoes, stir and cook for 2-3 minutes.
8. Add the cheese and mix well – if too dry add some more olive oil.
9. Add the arugula and let wilt for several minutes- mix again. Add the shrimp back and sprinkle with fresh parsley.
10. Cook for another minute.
11. Remove from heat and pour over the pasta.
12. Mix well and serve.
