Homemade Cavatelli Pasta
Homemade cavatelli (aka hats) is simple to make and requires only a few ingredients but is so delicious! Try this fresh pasta with our Cavatelli and Broccoli recipe or with a meat sauce.
Ingredients
4 cups all purpose flour
2 cups warm water
3 eggs beaten
1tsp salt
Steps:
- On a clean dry surface pour out the flour.
- With your hands, push the middle part away creating a circular well.
- In the middle of the flour, the well, pour in the beaten egg and 1 cup of warm water and the salt.
- Working from the outside in, start mixing the ingredients by hand.
- The dough may need some adjusting, if it’s too soft add some additional flour, start with ¼ cup. If it’s too stiff add more water, start with ¼ cup.
- When the dough is the right consistency, knead for several minutes and shape into a ball. The dough should look shiny when done.
- Place a bowl over the dough ball and then place a towel over the bowl.
- Let the dough rest for at least 1 hour.
- When ready, separate the dough into 2 or 3 pieces and with a rolling pin start rolling the dough into a round pie shape.
- With a sharp knife, cut each round piece into strips, about 1 inch in diameter and 7-8 inches in length.
- Once you have your strips, cut them into square pieces, approximately 1x1 inch in shape.
- Clean your surface and dust with flour.
- Take the squares and shape with your thumb by placing your thumb flat in the middle of the square, press down  and roll away. This movement should create something that looks like a hat.
- Dust the bottom of large baking sheets with flour and carefully place the hats onto the sheet. Let the pasta dry for about 1-2 hours before cooking.
This pasta is great with a marinara sauce, or broccoli or broccoli rabe and sausage or with a fish sauce.
