Broccoli Rabe and Sausage
Broccoli rabe and sausage is a dish that combines savory Italian sausage with the slightly bitter, taste of broccoli rabe. This dish is quick and easy to make in a pinch. You can slice the sausage into quarter rounds to cook even faster.
Ingredients
1 large bunch broccoli rabe
6 sweet Italian sausages (you can leave whole or cut into chunks)
4 large cloves garlic chopped
½ cup extra virgin olive oil
1 chicken bouillon cube
1 lemon quartered
1 tsp salt
½ tsp black pepper
¼ tsp red pepper flakes
Directions

- Cover the bottom of a large skillet with olive oil and let heat.
- Add sausage pieces and cook fully.
- Wash and cut about 1 inch off the bottom part of the broccoli rabe discard. Dry well and chop up into small pieces .
- Remove the sausage from the skillet, add more olive oil and sauté the garlic till golden.
- Add the chopped broccoli rabe to the skillet and saute for about 10-15 minutes.
- Add the lemon juice, bouillon cube and drizzle more olive oil over the broccoli rabe.
- Return the sausage to the skillet and mix again. Add more olive oil. Mix well.
- Serve with warm bread.
