Fresh Tomato Sauce
It wouldn’t be summer without fresh tomato sauce made from garden tomatoes and basil. This recipe is versatile and is great over pasta especially homemade pasta (see our recipe for ravioli and cavatelli) but it can also be enjoyed over chicken or fish.
Ingredients
8-10 large tomatoes- cleaned and cut into wedges
1 -12oz can tomato paste
4 cloves garlic chopped
extra virgin olive oil
salt
black pepper
red pepper flakes
12 fresh basil leaves
1/2 cup white wine
4 tbs sugar
Directions
In a saucepan, cover the bottom with olive oil. Add 1/2 tsp salt, 1/4 tsp black pepper, 1/4 tsp red pepper flakes.
- Add chopped garlic and sauté till golden.
- Add the cut tomatoes, tomato paste, sugar and white wine.
- Mix and cook over a medium heat. Let tomatoes cook down. Let simmer.
- Taste and adjust sauce. If needed, add more sugar, wine or salt and pepper. When adjusted, add the basil and let simmer for 40 minutes.
- Remove tomato skins.
Enjoy over your favorite pasta - add ricotta cheese and/or grated cheese.
