Green Bean Salad

This is a great side dish. The potatoes add a pleasant surprise to the green beans. They also absorb the dressing making them  quite tasty. Nonna usually paired it with chicken cutlets, but it will serve up well with other meats as well, like hamburgers or pork chops.

Green Bean Salad

Ingredients

1lb green beans – washed and trimmed
1 red onion – chopped
12 small white or red potatoes – cleaned
1 cup olive oil
½ cup apple cider vinegar
2 tsp sugar
½ tsp salt
¼ tsp black pepper

Directions

1. Boil the potatoes.
2. When potatoes are cooked cut in half.
3. Boil the green beans.
4. Drain and add to a large bowl.
5. Add the potatoes and onions.
6. Mix the olive oil, vinegar, sugar, salt, and pepper in a jar or shaker. Taste and adjust seasonings.
7. Pour the dressing over the green beans, onions, and potatoes. Mix well.
8. Let stand at least 30 minutes before eating.
