Orecchiette with Sausage and Broccoli Rabe

This was always a hassle free, quick midweek meal in our home. The bitterness from the broccoli rabe pairs well with the savory sausage flavors and the pasta blends the two flavors well.

Ingredients

1 lb Orecchiette pasta
1 large bunch broccoli rabe
4 sweet Italian sausages cut into bite size pieces
½ cup pecorino romano cheese
4 large cloves garlic chopped
½ cup extra virgin olive oil
1 chicken bouillon cube
1 lemon quartered
1 tsp salt
½ tsp black pepper
¼ tsp red pepper flakes

Directions

1. Boil the water for the pasta.
2. Cover the bottom of a large skillet with olive oil and let heat.
3. Add the bite size sausage pieces and cook fully.
4. Wash and cut about 1 inch off the bottom part of the broccoli rabe discard .Dry well and chop up into small pieces .
5. Remove the sausage from the skillet, add more olive oil and sauté the garlic till golden.
6. Add the chopped broccoli rabe to the skillet and saute for about 10-15 minutes.
7. Add the pasta to the boiling water.
8. Add the lemon juice, bouillon cube and drizzle more olive oil over the broccoli rabe.
9. Return the sausage to the skillet and mix again. Add more olive oil.
10. Drain the pasta, and add to the skillet. Add the cheese, add more olive oil and mix very well.
11. Serve with warm bread.
