Split Pea Soup
This was a winter staple in our house. It’s a hearty dish that is great for warming you right up.  This recipe uses cubed ham but you can substitute bacon or sausage for an even heartier flavor.
Ingredients
1 package split peas, soak overnight and rinse
1 lb ham steak cubed
1 large onion - chopped
1 head celery - chopped
1 bunch carrots- chopped
Extra virgin olive oil to cover bottom of the pan
2 chicken bouillon cubes
Salt
Pepper
2 -32oz containers of chicken stock
6-8 fresh basil leaves chopped
1 cup white wine
Directions
1. In a medium size stockpot, cover the bottom with olive oil and add 1/2 tsp salt , 1/4 tsp pepper and ham. Let sauté about 5 minutes
2. Add the chopped onion, celery, carrots, diced tomatoes and sauté another 10 minutes.
3. Add the stock, bouillon cubes, peas, white wine, and chopped basil. Let simmer 1 hour.
4. Taste and add more salt and pepper if needed.
