Stuffed Red Peppers

This is a tasty versatile dish that can be enjoyed as an appetizer, side or as a meal. In our home, we usually add a side salad and enjoy the peppers as a meal.

Stuffed Red Peppers

Ingredients

4 red bell peppers cleaned, hallowed, and halved
½ lb ground beef
1 cup cooked white rice
1 ball of fresh mozzarella cheese grated
1 egg mixed
3 cloves of garlic chopped
2 shallots chopped
½ cup grated cheese
¼ cup chopped parsley
8oz can tomato sauce
Salt and pepper
Basil leaves for garnish

Directions

1. Cover the bottom of a skillet with extra virgin olive oil.
2. Add the garlic, shallots, salt, and pepper and cook till garlic is golden brown.
3. Add the ground beef and sauté till brown.
4. Add the rice and egg. Mix well
5. Add the grated cheese, parsley, and tomato sauce. Mix well.
6. Let simmer a few minutes.
7. Line a baking sheet with parchment paper and arrange the 8 pepper halves.
8. Begin stuffing each pepper.
9. Place in 375F oven for 35 minutes.
10. Remove and add the mozzarella cheese to each pepper half and return to the oven for 15 more minutes.
11. Garnish with basil leaves.
